Elk Breakfast Burritos

Elk Breakfast burritos are perfect use of your elk meat and are one hell of a way to start your day. Wrap these bad boys up in aluminum foil and pack them for lunch or breakfast in the field. This simple burrito you can cook on your stove, over a campfire or your grill.

Ingredients

  • 1 pound of ground elk
  • 1 Cup of chopped onions
  • 1 cup of chopped Peppers
  • 1/4 cup of salt and pepper blend
  • 1/4 cup of pepper flakes
  • 4 eggs
  • 1 cup of shredded cheese
  • 1/4 cup garlic salt
  • Tortillas

Cooking

Get yourself a pan or skillet and put in your elk sausage and start to cook it up.

  • While it is cooking start chopping up you onions and peppers unless they are pre chopped 
  • Mix in the onions and peppers in the pan with the elk sausage
  • Mix in your salt & pepper, pepper flakes, and garlic salt
  • Let it cook for about 15 minutes or until meat browns 
  • Once meat starts to brown crack you eggs and mix them in with the meat and peppers
  • Stir the eggs meat and veggies together
  • Once eggs start to cook add in the cheese
  • Once the cheese starts to melt, give everything in your pan a few more stirs.
  • Everything should now be cooked scoop out the goodness in the pan and put it on your tortilla 
  • If you want add on hot sauce and sourcream to your burrito

BONUS- Heat up your tortilla for about 30 seconds on each side before you scoop in your ingredients

Once you mix it all together Enjoy Your Burrito!

Tip– When rolling a burrito tuck in one of the vertical sides before you start to role you tortilla up.

COOKING ON THE GRILL

This should make about 2-3 burritos depending on tortilla size, scoop the rest up and save it for later or make a few extras for your pack!
